Chocolate Coconut Energy Bites Recipe
Ingredients
¾ Cups Rolled Oats (for gluten free option, be sure your oats are labeled GF!)
¼ cup Flax (ground)
½ cup shredded coconut + extra for rolling
¼ cup cacao powder
½ cup cashew butter
¼ cup maple syrup
Pinch of salt (if nut butter is unsalted, otherwise omit)
½ cup mini chocolate chips*
*use Enjoy Life chips for dairy/allergy free version
Directions
Measure out all ingredients in a bowl, stir until well blended
Scoop using your melon baller or spoon, roll into balls
Roll in coconut shredded coconut
Let set in fridge for about 20-30 mins
