As the weather starts to cool here in the South, and by cool I mean semi-crisp mornings and low 80s in the daytime, the cravings for comfort foods begin!
As much as I love to indulge in all of the season's comfort foods, sometimes I just want a hearty salad instead. This Autumn Roasted Squash & Almond Salad with Maple Dijon Dressing is a perfect fall meal, combining tender roasted butternut squash, crunchy toasted almonds, and a sweet yet tangy maple Dijon dressing. This salad allows you to enjoy all of your favorite autumn flavors while giving yourself a good dose of nutrients!

Autumn Roasted Squash & Almond Salad with Maple Dijon Dressing
Ingredients:
For the Salad:
4 cups mixed greens (such as baby kale, arugula, and spinach)
1 cup roasted butternut squash (cubed and roasted with olive oil, salt, and pepper)
¼ cup sliced almonds (lightly toasted)
½ cup thinly sliced red onions
¼ cup dried cranberries
½ cup crumbled goat cheese or feta (optional)
2 tbsp roasted pumpkin seeds (optional for extra crunch)
For the Maple Dijon Dressing:
3 tbsp olive oil
1 tbsp Dijon mustard
1 tbsp pure maple syrup
1 tbsp apple cider vinegar
Salt and pepper to taste
instructions:
Preheat the oven to 400°F (200°C). Toss cubed butternut squash with olive oil, salt, and pepper, then spread it in a single layer on a baking sheet. Roast for about 25 minutes, flipping halfway through, until tender and slightly caramelized. Let it cool.
In a large bowl, toss the mixed greens with roasted squash, toasted almonds, red onions, and dried cranberries. Add the crumbled cheese if using.
In a small bowl or mason jar, whisk together the olive oil, Dijon mustard, maple syrup, and apple cider vinegar. Season with salt and pepper to taste.
